Being in the south, biscuits and gravy is a sure winner for any meal – breakfast, lunch, or dinner! This grain-free biscuits and gravy recipe is my family’s favorite! It’s made with an easy homemade sausage seasoning mix, but added to beef instead of pork!
For the biscuits.
Flours. I use a mixture of almond flour, cassava flour, and coconut flour for these biscuits. You can substitute another grain-free starch for the cassava flour. Potato starch, tapioca starch, or arrowroot powder will all work. I have not tried any other substitutes or grain-free flours in this recipe.
Fat. I love biscuits the best when they’re made with butter! It is by far my favorite. I have tried these with coconut oil and olive oil instead and they work ok, but the end product is more crumbly. You could probably use ghee, too, but I haven’t tried that yet.
Liquid. I usually use goat milk or organic whole milk for these grain-free biscuits, but you can use whatever kind of milk you want. Just keep in mind that coconut milk will change the flavor of the biscuits. You can also just use water, if you want. I don’t think that tastes as good, though!
Egg. Yes…. egg. I don’t think egg replacements work very well here. They do not hold the coconut flour in place well enough.
For the gravy.
Meat. I can’t eat pork, so I make my grain-free biscuits and gravy with homemade beef sausage! It’s pretty much the same as making your own regular sausage at home, just with beef instead of pork. If you do eat pork, you can use that instead. You could probably also use ground turkey or chicken as well, I haven’t tried those, though.
Seasoning. After a few years of messing around, I finally came up with a homemade sausage seasoning that I like! It may not be quite the same as the store-bought stuff, but it’s yummy and hits the spot when I’m craving sausage. It’s a mixture of pepper, thyme, sage, and garlic. I usually buy all those in bulk from Frontier Herbs on Amazon.
Liquid. I use half broth and half milk for my sausage gravy. You can use all of one or the other, if you want. I love the added nourishment of homemade chicken broth! And this gravy is the perfect place to sneak it in.
For the milk I use goat milk or organic whole milk (just like in the biscuits). You can use whatever kind of milk you like, though I personally don’t think coconut milk tastes very good in gravy. If I make this dairy-free I just use all broth.
Thickener. Just like with the cassava flour in the biscuits, you can use any sort of starch here to thicken the gravy. Potato starch, tapioca starch, or arrowroot powder will all work.

Grain-Free Biscuits
Free from grain, gluten, and refined sugar, with dairy-free option.
Ingredients
- 3/4 cup almond flour
- 1/3 cup cassava flour (or arrowroot, tapioca, or potato starch)
- 1/3 cup coconut flour
- 1 tablespoon baking powder (here’s how to make your own!)
- 1/2 cup cold butter (or olive oil for dairy-free)
- 1/2 cup milk of choice
- 1 egg
Instructions
Preheat oven to 425 and line a cookie sheet with parchment paper.
Place dry ingredients and butter into a food processor and pulse until the butter is small pea-sized pieces. (Alternatively you can cut the butter in with a pastry cutter or two knives.)
In a liquid measuring cup, whisk together milk and egg.
Slowly pour milk/egg into dry ingredients and mixjust until a ball forms. (You can either do this in the food processor, or dump the butter/flour into a bowl and do it there.)
Using a 1/4 cup measuring cup, scoop the dough onto an ungreased baking sheet.
Bake for 10-12 minutes, or until golden brown.

Makes 8 biscuits.

Grain-Free Gravy with Beef Sausage
Free from grain, gluten, eggs, and refined sugar, with dairy-free option.
Ingredients
- 2 tablespoons coconut oil
- 2 pounds organic ground beef
- 2 teaspoons sea salt
- 2 teaspoons black pepper
- 2 teaspoons thyme
- 1 teaspoon sage
- 1 teaspoon granulated garlic
- 1 cup milk of choice
- 1 cup broth
- 3 tablespoons cassava flour (or arrowroot, tapioca, or potato starch)
Instructions
Heat a large skillet over medium heat.
Melt coconut oil in skillet then add ground beef.
Sprinkle seasonings on beef and stir-fry until just completely cooked through.
In a liquid measuring cup, whisk together cassava flour and milk.
Slowly pour milk mixture into the cooked beef and stir until it begins to thicken.
Add in broth and cook until thickened, stirring frequently to keep from burning.
